It is essential, but essential to make this dish using genuine pancetta cut into small strips, rather than using the ghastly ‘lahdons’ they sell in supermarkets. It is the difference between night and day.
I put 4 egg-yolks, some cracked pepper, parmesan, light cream, fresh basil and a small amount of chilli flakes into a bowl. Then I fried the pancetta until golden, let them cool and turned them into the bowl as well.
I boiled up some fresh penne (don’t like using long pasta….makes everything too dry) and then tossed it in the sauce bowl, and served immediately with a green salad. It was very good.
May I draw your attention to the hand-painted plate…a christmas present given to me by Caroline’s son. It depicts my favourite car of all time (well…for this week!) namely the Ferrari Dino.
