I had imperious amounts of new potatoes left over after Sunday lunch given that we made a Cauliflower cheese as well, and so I decided to turn it into a salad.
I added just about everything I could find in the fridge to it as well, including tomatoes, coriander, chopped cheddar cheese, half-eaten pieces of chicken, some baby courgettes chopped up, onions, some left-over frankfurters…thats about it, and then sloshed some olive oil and vinegar lemon juice salt and pepper on as well. It was delicious !
I then had the idea of putting a plateful of it in the Microwave to heat it, and when it came out forked it into a sort of mash (mush !!) and added some butter which made it even MORE delicious !
The next plateful I added some Moroccan spice infused breadcrumbs…..spicy this time….even better still!
Potatoes are a truly versatile food, and a salad of them can be made into almost whatever one wants !! I am going to add some bacon lardons tomorrow and have it warm again…..cant wait!
