The butcher that makes them stopped carrying them for a while, but now has them once again, so I picked one up for dinner while out running errands today. It’s a nice cut of beef rolled up with cheese (not sure what kind), red peppers and spinach, and when baked properly in the oven, a tasty, self saucing main course. The rice is jasmine, with a little onion and garlic for flavor, and the carrots are three different colors- yellow, orange and purple, and tossed in butter with some dill seed, since I don’t have any fresh dill. And the salad is another farmers market special, tossed in an unusual vinaigrette I got at the grocery store- shiitake sesame.
