Mushroom Quiche

One of the local stores has had a special offer on chopped mixed mushrooms recently, and I’ve stocked up – they seem to last forever in the fridge.  Couldn’t think what do do with them other than something lightweight as we are all feeling very very fat, which some of us are, but feeling it is not good!!  I googled recipes and eventually decided on a quiche of some kind, but of course when I got to the shops I forgot all the other stuff I needed, so I winged it.  The end result was really really yummy!

Firstly I made the pastry, very short and crumbly.  it was supposed to have sundried tomato butter in it, but I couldn’t find any, so blitzed a few s.d. tomatoes in with the flour, then added the butter, blitzed it again,  pressed the pastry into the dish, very thinly. I sauteed some sliced red onions until nicely caramelised, spread them on the base of the pastry.  Sauteed the mushrooms until the juices evaporated and the mushs were nicely coloured, seasoning well, and adding a little lemon juice at the end. These went on top of the onions. Made a mixture of eggs, milk and some yoghurt I found at the back of the fridge, good seasoning.  Poured on top of the mushrooms, then sprinkled some fresh chopped dill over that.  I wanted sage, but couldn’t find it, so dill it was, not a herb I use a lot tho. Baked it until lightly browned and just set.  Served it with some baked tomatoes and a carrot/corn (we call them meilies) mixture that I’d steamed with a whole lot of mint that is growing like wildfire in my garden.  The buck haven’t found it yet, so I need to use as much as I can before they do!

I was really chuffed with this meal – my mushrooms often are a bit bland but I seemed to have hit the flavour nail on the head for a change, and the tomato pastry made a good change from my usual cheese one.  The yoghurt gave the filling a nice bite, and the onions a nice flavour/texture contrast.  My cooking is really quite boring, and I liked the fact that a) I sucked most of this out of my thumb, and b) it was  healthy and lightweight.

    Quiche !! Bah…..REAL men don’t eat quiche !! Just joking….I eat it and I am a real man (last time I looked!)
    Your cooking doesnt sound boring at all…though I am fascinated by the remark that your sucked this out of your thumb !!
    I think I’ll slice mine open tonight and see what I can get out for dinner !
    Any clue to where in the world you live ?? Just curious as to how international this site is becoming!

    There was a big clue in the post! “We call them mielies…”

    Mielies is the Afrikaans word for corn in the cob – so alison is in South Africa.

    Also if you click on the author name you can see their previous posts and there are some clues in those as well.

    So nice to see you posting again; welcome back cousin Alison! And don’t sell your cooking short… Remember, it’s only boring to you- to everyone else it’s exotic and fascinating!

    Went there last year – Cape Town – goodness, the most beautiful country I have ever been to…and the food…and the wine….to die for.
    The only country I have been to that have good white wine at 6 or 7%…means you can drink at lunchtime without falling over afterwards!

    LOL. Actually Anyard its ‘Saarf Effrica”, but you’re close enough! I’m just outside Durban, in Kwa Zulu Natal, what used to be a nice little village called Hillcrest. if you Google earth it, you might find us! Good to be back thanks Queso, now to remember to take some photos before we eat it and then to learn to post them!!
