To thwart my efforts at saving money, the shopping mall next door had a grand opening late last year with not one, not two, but four Japanese eateries: 2 restaurants, one dessert place that served sushi, and a French-Japanese bakery. Also, the supermarket had a counter that sold sushi to eat at the counter or take-away.

One of my favourite restaurants, Sushi Tei, has special menus for each season. This season was on salmon and collagen. The salmon steak tartare came with a sesame sauce which my mom has bought before and we both love it on salad. For verisimilitude a quail egg was cracked on top of the minced salmon, and it sat on a bed of chopped avocado. The avocado gave the whole thing a bit more bite and sweetness. The biggest challenge was to put enough sauce so that the rawness of the salmon doesn’t seem too overwhelming, but not so much that the richness becomes cloying.

yeah, they put “collagen” in some of the dishes. I was too chicken to try any of them out!
They do that here too. Usually it just means “extra fat”.
