Well, after being down and out internet-wise for the past month or so, I am finally back – hope y’all missed me. See a whole lot of new members in the meantime tho!
So back to the whole process of being bored with my cooking and trying to think up something interesting. Nights are getting darker earlier and cooler, so something ribsticking was in order. Been eating a lot of fillet steak recently, as the shops have had a price war on it, so am trying to stick to chicken for a while. Also been a rush of birthdays in the family, and they always want steak, egg and chips for their special suppers!
Got some chicken fillet strips, sauteed them (no oil, being very good), also sauteed a packed of lean bacon pieces. Put them in a large casserole, added a tin each of mushroom and chicken/mushroom soup and some cooked linguine. Mixed the whole mishmash together, topped with some breadcrumbs, to which I had added some parsley while processing the crumbs. Baked until golden brown, and served with some hot fresh onion/cheese bread from the store. okay, so I know there was too much bread, but that onion/cheese stuff was sooooo good. Meal came out ok, although a tad dry, could have done with more liquid, but very tasty, and went down well with my easy to please mob.
