I’m challenging myself to learning how to better prepare and clean fish – as opposed to always just buying whatever fish has been filleted already. This guy I just gutted and scaled – we picked off the baked flesh with chopsticks. Which is actually one of my favourite ways of eating fish because you can more easily pick out bones.
The tofu came from a local store in which they make the actual tofu right there in the window. It always seemed closed to me when I passed – but I worked out I just have bad timing. Pretty good tofu – and very fresh! I will deffo be going back for more – also they give away okara for free – so I must ask for some to make some new Japanese dishes and some mini veggie burgers.
Ingredients: basil, feta cheese, fish, ginger, lemon, lettuce, mitsuba, olives, parsley, rocket, soy sauce, tofu, tomatoes

Rarely. But so what, I love the stuff!
Here’s what I had for dinner tonight. In fact I’m still eating it, as a good study aid…
Barley rice, topped with seasoned dried seaweed; ojingeochae muchim (spicy seasoned dried squid); gyeran mari (rolled egg omelet) to which I added green onion, garlic, and shiitake mushrooms. Totally noms, even if the squid gets stuck in my teeth.

Ingredients: barley, black pepper, corn syrup, egg, garlic, gochujang, green onion, oil, rice, seasoned dried seaweed, sesame oil, shiitake mushrooms, soy sauce, squid, sugar

Having yattered on about Campari not tasting the same in the Yookay as it does in Italy….I have been almost unable to stop drinking. The bottle is soon empty and so it might end there!
Tonight the appalling weather set in for a few days and so it felt like winter is heading in our direction.
So we made up a Cauliflower cheese. Pretty good it was too, as we let the cauli drain well, which avoids a watery cauliflower cheese!
We used cheddar for the sauce (which Caroline made) and cauliflower for the main ingredient…..!
As accompaniment I had a lovely Campari with San Pellegrino water, and Caroline had a glass of plonk.
We ate the 13 amp fuse on the table as pudding
We then didnt watch Big Brother and I played stupid games on my Ipad….I am regressing to be a child !

I’ve been growing kale on the balcony and noticed how nice and uniform the leaves are right now – so wraps it is! Just a piece of raw salmon with dill, wrapped and secured with a toothpick, sprinkled with lemon juice and black pepper and steamed in a bamboo steamer. After steaming I removed the toothpick and tied a garlic chive around the parcel.

The rocket for the salad also comes from the balcony. It really is best picked fresh I think.

Ingredients: capsicum, chives, dill, kale, olives, rocket, salmon, tomatoes

The plan as such is simple. Although 3 of us are omnivores, there is this one that just refuses to broaden his palate ( claimimg he tries) and separates his foods, and picks out the peppers and onions and the mushrooms…generally drives me crazy. BUT- he loves bread, and sausage, and chicken and cheese, and any combination there of. I dry sauteed mushrooms, peppers and asparagus(also dreaded) with sesame oil and garlic, cooked some sausages and chicken on the grill, cut up a franzella, layered it in the pan, covered with mushrooms and asparagus, sprinkled with herbed olive oil, bits of mozzarella, Parmesan and garlic on top. Hm- separate that! OK I did make peas just in case that goes wrong…and , o well I did make cupcakes.

I am nothing if not an egalitarian (if that is the right word!)
On the way back to the Alcatraz this evening I made 2 stops along the way.

The first was at Tylney Hall, a truly wonderful…. beautiful hotel set in the Hampshire countryside amidst rolling hills and fields. The gardens are particularly amazing and so was able to reenact my mantra of eat or drink with something to look at as well.

Eat was out of the question tonight – too damned expensive - but I fancined a drink and ordered an Americano (Campari, Martini and Soda)
To my utter amazement the barman asked me if I wanted that with hot or cold milk….!
He hadn’t a clue what it was and had assumed I was ordering a coffee. I explained, patiently…. but what came was an abomination in a cocktail glass (the naffest invention ever other than if serving a Sidecar or a Martini Cocktail..!) with a rather too thick wedge of lime in the glass. Anyway I enjoyed it – sort of – in the park, looking down the row of oak-trees disappearing into the distance, surrounded by plutocrats and fakirs….!

My next port of call was for dinner…..at Ikea…in Southampton! The sublime to the gor’ blimey!
My camera played silly buggers and so I Googled Ikea Meatball, and up came a total reincarnation of what I was served…complete with artistically placed piece of cilantro (note the easy use of the Americanism…!) and slop of loganberry slop!
The meatballs weren’t bad at all actually…the sauce tasted of papier masche..and the potatoes weren’t too bad either. For the money, and sthe setting – overlooking Southampton Water – it wasnt too bad at all.

I stuffed the car full of tat…which groaned its way the short distance to the ferry and thus back home….

Picking up bargains on scallops, squid and figs led to this rare 3 course meal…..
Grilled Scallops on Lemony Kale with Wasabi Mayo

This is a 5 minute dish – and cheap! The kale was chopped and sauteed in olive oil and lemon juice and then made into little green nests to hold a scallop.
Total cost about 200 yen – the scallops were 160 yen, the wasabi free with the scallops, the kale I grew myself and a dab of mayo and splash of lemon juice.
Looks expensive, no? [/Heidi Klum]
Calamari & Salad

Also a rare potato chip indulgence!
Actually the most decadent part of this was the tomatoes on the vine we splurged on.
Baked Fig with Blue Cheese and Kahlua

I was worried that the Kahlua would clash a bit – but it’s the only liquer in the house!
Luckily it tasted great – and was stupidly easy and quick. Cross cut the fig, jammed a bit of blue cheese in the middle, splash of Kahlua over that and baked in the toaster oven for 10 minutes.
Ingredients: blue cheese, capsicum, cucumbers, figs, kahlua, kale, lemon, mayonnaise, parsley, potatoes, scallops, squid, tomatoes, wasabi

Since my last post we have gained a new puppy… called BB…and she has a Facebook page (B B Anais Kirchem) in case you like being Facebook friends with a dog…!
As she is called BB (the Anais is just for show and to annoy people who think we are being pretentieux…!) we also bought a new BBQ as B and Q (are you keeping up here!) was having a super sale of huge BBQ’s.
We assembled it…that is a complete lie…Oscar assembled it, I went out…and much to his (though not my) surprise it worked first click, and so instead of cooking our Chines suck in the oven, we cooked it on the new BBQ from B and Q and watched by BB…who it turns out has something of a liking for duck !

The duck was wonderful. Crispy as it should, and Sainsbury’s have finally sorted out their rather anemic Hoisin sauce, which this time was delicious. There were ample pancakes and we shredded some spring onions and some cucumber.
A neighbour, who is heavily into barbecues as well, suggested we parboil some potatoes and then place them on some foil in the BBQ (from B and Q and watched …oh, never mind!) drizzle them with olive oil and some fragrant salt and leave them to cook as well. They were delicious too, especially as I had drizzled them with some of the duck fat !
We had a Raymond Blanc tomato salad with it, and for pudding we had some rather lovely berries – hope you like the arty farty photo. makes up for the first one! – which, to my regret, are beginning to eke out in the shops as Britain heads into Autumn and another infernal winter.

I have travel on my mind

We had a simple, simple dinner tonight:

Cooked some Mahi-Mahi from Trader Joe’s (pre-spiced) at 400 degrees for about 25 minutes, along with some rice and fresh seaweed salad from the local market. Fran got all busy with the salsa for the fish, mixing pineapple, red pepper, cucumber, garlic, lemon and cilantro. Pretty damn good mix.
Ingredients: cilantro, cucumber, garlic, lemon, mahi mahi, pineapple, red pepper, rice, seaweed salad

Tonight- Cobb Salad Pizza
As I travel down my road of actually creating mostly edible meals, I have noticed a slight trend. The pizzas I make are delicious. I have had my ups and downs with meals. And definitely had some shaky ground with desserts, but my pizzas are definite winners. This may be because the concept of a pizza is pure genius, or just because of the ingredients I have been using. (See Sausage Fig and Goat Cheese Pizza ).

The chicken and bacon are straight from the grocery store. But the red onion, avocado, and grape tomatoes were from Fridays grab at the Farmer’s Market. I actually went back today, since my 2 kids ate a total of 15 apples and 10 peaches since Friday morning, only to find that they are closed on Mondays. Super bummed!
Good thing I had this little guy to cheer me up. The Chef LOVED it. The only drawback, was that it was slightly messy. One must concentrate on not spilling when eating.
*I also doubled the ingredients and piled mine high*

Felt very dodgy on the tummy front yesterday, but a tomato cream sauce is a gentle one. Had a splash of white wine and fresh dill.
The salmon was technically sushi salmon – but it was a good bargain and the best thing is you know you aren’t going to get any bones, so I often use it in pasta sauces.
Ingredients: black pepper, cream, dill tomatoes, onions, pasta, salmon, wine

We hit the Sunset Market on 25th and Irving, my favorite Asian market in the city, and stumbled home with far more than we had planned. I sauteed some shrimp up with garlic, ginger, Jalapeno and butter, added some Enoki mushrooms and then some spinach lo mein that I’d already boiled off. In a separate effort, I steamed some baby bok choi and some homegrown carrots that a friend had grown in town (Fran is big on steaming and I used up my ‘fried’ quotient on the shrimp). Piled it all together with some toasted sesame oil, Tamari, and seasonings and vowed to get back to the market within a week.

Ingredients: baby bok choi, carrots, enoki mushrooms, garlic, ginger, jalapeños, sesame oil, shrimp, spinach lo mein, tamari

With summer flu, heat and general exhaustion we had a big energy-charge dinner last night with sage potatoes, green beans and chicken rolled with smoked paprika, 3 types of basil, onion salt and garlic.
I just managed the plate but had to lie down after!
