Tonight I made the greatest burger that has ever been made. No question ….. (and if you believe I mean that seriously, you’ll believe anyole’thing!!)
But it was verygood … I started off with some quality Scottish minced beef … not fillet or something stupid, but just good quality beef with about 30% fat.
I added breadcrumbs, some oil, some Lea and Perrins, a tad of chinese 5 spice (which absolutely defined this burger!) a dashlet of cinnamon, some garlic and some Italian green herbs. I mashed them all together, let them stand for a while (why??) and then formed the mince into 2 x 1/2lb plus patties which I plonked in the fridge to cool their heels.
They got put on the barbecue once it was piping hot, whilst I readied the buns. Toasting them first,I then put some mayo with tomato ketchup on the bottom and laid a small slice on pineapple (another defining ingredient) … next came some fresh tomatoes and 2 basil leaves, upon which I laid a thin slice of gherkin for a bit of sour and a couple of salad leaves.
The burger was cooked nicely, and so off they came and they were huge … I mean h u. g e … but not too huge to enjoy. Not collapsed … just nicely done.
We added some mustard to the bun and Caroline, being slightly (decidedly!! Ed.) odd added a dollop of the strongestnastieststomachstripping Itaian chilli sauce you can imagine.
We served with salad and a nice cooled bottle of Californian Valley Rose!
Just the most perfect meal I can imagine ….!
