292:365 King salmon with peach salsa

1 peach
1/2 green onion, chopped
small handful of cilantro, chopped
2tsp balsamic vinegar
1tsp sugar
pinch of salt
squeeze of lime juice

1lb king salmon

Bring a pot to boil. Drop in the peach and turn off the heat. Let sit for about two minutes, then remove with a slotted spoon. This is called par boiling, and is perfect for removing skins. Remove ths skin, and chop the peach into small cubes. Plop the pit into your mouth and suck on the rest of the fruit attached.

Combine all of the ingredients into a small bowl, adding some hot pepper if you’re into that sort of thing, and let sit for at least an hour. Overnight works, too.

After your boyfriend has convinced himself of his manliness, have him put the king salmon on the grill. Argue about whether to put the salsa on now or after it’s cooked. Demand that he trusts you. When he brings the fish back in 30 seconds later, tell him that it’s not cooked through. Smile smugly when he cuts into it and discovers that it’s not cooked through.

Once the fish is fork tender, plate it and spoon the peach salsa over it. Serve with brown rice and steamed veggies. Tell your boyfriend you told him so when he exclaims how good the salsa is.
