With fried plantain chips, fennel, apple & cucumber salad. My first homegrown cuke – was yum. Dressing was a garlic & lime mayo – from scratch – the trick is the slow steady stream of olive oil feeding into the other ingredients as it blends.

  1. Hmm….Egg white omelettes I have never quite seen the point of….they taste of…well…nothing! But posh restaurants know how to charge for them…..

  2. They are ok especially for something like this. Really though I had to use up 2 egg whites because I’d used the yolks in the mayo for the salad! I was being economical *and* posh!
