If you have some leftover pork lying around, this dish is a killer way to use it up. Start by sauteing 1/2 lb. of bacon. Drain and then add 2 cups of sauerkraut. Mix in 2 tblsps. of brown sugar and a cup of beef stock. Add 2-3 cups of sliced pork and heat. Serve over mashed potatoes. We had it tonight with a simple salad as well. This dish has a great Germanic flavor to it.
