Mexican style flavors

(No swine flu jokes here.)

Ok so I went grocery shopping this weekend while hungry so I ended up buying a ton. Tonight I fixed some burritos I got a Trader Joe’s (only at half of one tonight, saved the rest for tomorrow). I also made some yellow rice from a mix, to which I added mushrooms and corn, so tasty. I also made probably the best black beans I’ve ever made. My guesstimated recipe here, so’s I can remember it in the future:

Drain and rinse can of black beans; pour into microwavable container. Pour in some chicken stock made from poaching chicken a la gomi earlier in the week. Pour in just enough so it looks like it’s too much. Add cumin and black pepper and a pinch of salt. Realize later the salt is unnecessary since the broth was already plenty flavored. Stick in microwave for 2 min. Retrieve from microwave, mash the beans with a potato masher, realize it’s way soupy and pour it into a saucepan and thicken it up while the rest of your stuff is cooking. ~fin~

  1. Oh awesome – I was looking for a recipe like this the other day and totally messed up and bought red kidney beans instead and let me tell you those do NOT work out ok.
