
It has been a while since we had any lamb around here so it was finally time to make some again. I marinated a couple chops in balsamic vinegar with chopped up mint and garlic, with a dash of Sriracha hot sauce for a couple hours while roasting a whole sweet potato in the oven. Thanks to the magic of my Cuisinart, I evenly sliced zucchini, red peppers, tomatoes, red onions and eryingii mushrooms, and sautéed them in olive oil with garlic and basil… with a pinch of pepper and salt, it came out really well, as did the sweet potato with lots of butter. Actually the chops were good too- I grilled them on the GeoFo (of course, I would hate to disappoint y’all) til they were medium-well, and they really picked up the garlic-mint flavor nicely. A good change of pace.
Oh by the way, last night we had burgers and fries with potato salad and cole slaw and macaroni salad.
