It’s getting upon the end of the week, and time to clean out the fridge, freezer and pantry of stuff that’s been accumulating. As well, on a cold night, we both like a good hearty roast to warm up. So I took one of the freezerbags of tomatoes I’d put away last season and cooked them down with garlic and onions and fresh rosemary and oregano from the garden. Into the dutch oven went sliced red, yellow purple and sweet potatoes, fennel, celery, red onions, carrots, and a couple different kinds of bell peppers. I popped in the pork roast, and poured the sauce over the top and put the whole thing into the oven at 350° F for an hour and a half. I served it with a packet of TJs pre-cooked wild rice, which I liked but J did not, especially, The roast and the veggies, however, were scrumptious.
