Zucchini Quesadillas

So tonight we had yum yum yummy Zucchini Quesadillas. I don’t usually like zucchini but in this meal they are really nice.

I grated zucchini then lightly strained it between some paper towel, grated mozzarella cheese, Mum put some chili and red onion into the food processor as we both ate chopping onion cos it gets really strong and hurts our eyes. Heated up the Old Elpaso Tortillas to make the quesadillas, then layered the zucchini then chili and onion and then the cheese and oregano between the tortillas.

Mum put together a nice rice with kidney beans, tomato(salsa like stuff), corn and i think thats it, which was good with the quesadillas.

  1. How come you didn’t use monterrey jack and cheddar?? It looks good either way, but I wouldn’t have thought to use mozzarella in a quesadilla

  2. I love mozzarella in a quesadilla — it’s my default melty cheese. It’s buttery and creamy and has a little less fat than the other cheeses, too.

    My psycho American ex used to go into head asploding sarcasm overload when we made nachos with mozzarella.

    Mozzarella is also our default generic melty cheese for anything and is ALWAYS in the fridge. We don’t get monterrey jack here, I cannot recall ever seeing it ever in Australia. I can’t imagine what the closest equivalent would be?
    We sometimes have cheddar, but more often than not it goes mouldy (yes, I said mouldy, with a u) before it gets used , cos we’d rather eat the mozzarella.
