Tonight we harvested two of our eggplants and I incorporated them into an Eggplant and Pesto Gnocchi that I based on a Liguarian eggplant pasta. We also enjoyed a tri-tomato salad with bell peppers, most of a baguette, and a bottle of wine. Yay, Tuesday!
