Today’s J’s birthday, and there’s nothing he hates more than having a fuss made over him… so we kept it to a minimum: L & I made him one of his favorite meals for dinner, taco salad, and kept it at that, although we’ll be BBQing tomorrow.
Lots of ingredients in the salad (lots of chopping and mandoline-ing, too…), I’ll go layer by layer: Taco shells on the bottom, jasmine rice on top of that, then some of the red and white beans from last night, taco flavored beef, romaine lettuce, green cabbage, shredded carrots, diced red bell peppers, sliced radish, sliced cucumbers, sliced avocado, diced red onion, chopped cilantro, mild roast garlic salsa, and sour cream on top. One of the best we have made yet, but no photographic evidence with which to placate Gomi… Pity too, it was a colorful meal.
Happy Birthday Joe- I’ll be nice and not tell everyone which birthday it is.
